View Full Version : Chicken Stroganoff.

A nice twist on the classic dish, using chicken instead of beef. You'll need:

Chicken breast.
Smoked Paprika.
Onions.
Green peppers.
Garlic.
Mushrooms.
White wine.
Chicken stock.
Sour cream.
Sugarsnap peas.
Parsley.

Slice up your chicken breast and season with salt and pepper. Now, cover in the smoked paprika. Be fairly generous, give it a good coating. Put olive oil in a hot pan and saute the chicken, giving it a nice bit of colour. When done, put aside and rest on a plate.

Slice up your peppers, onion, garlic and mushrooms. Leave the mushrooms and peppers pretty chunky, and thinly slice the onions and garlic. Saute these off in the same pan you used for the chicken so you infuse the flavours into the vegetables. Add white wine and reduce it.

Add chicken stock and a healthy glob of sour cream, stir in well and add the chicken back in and a handful of sugarsnap peas, stir through. Cook out and stir through the parsley just before serving.

I tend to use everything by taste so adjust everything according to your preferences.

You can also add a little Tarragon if you want to add some more depth to it.

^ had this last night, with tarragon and parsley and a bit of nutmeg too. I didn't use sugarsnap peas or peppers because I didn't have any, used julienned carrots, and substituted creme fraiche for soured cream (they are pretty much identical anyway). It was delicious.

Never thought about putting nutmeg in it. Might give it a whirl sometime. Glad you enjoyed it.
