Isn't there a way to do a reaction with some stuff to get an H2 byproduct?

just use a simple electrolytic cell with graphite electrodes if you want to collect H2 and O2 gas

you have to add a soluble electrolyte. if youre just going for H2 or O2, use a group 1 or polyatomic salt cation with polyatomic anion. so stuff like ammonium nitrate, sodium nitrate etc are pretty good

for example, if you want to collect Oxygen gas, dont use salt as an electrolye because chlorine ions can get oxidsed on the electrode and turn into chlorine gas, which is bad.

Any reactive metal (ie magnesium) in water will give off pure hydrogen gas.

(don't drink the water afterwards though)
