When dad bought this house 30 years ago he planted seven walnuts trees. They are now fully grown (or at least seemed to have stopped). I was thinking of planting some more. My question is how far apart do they need to be? for optimal growth.

Well, how far apart are the ones you currently have?

About 3 meters, but i am curious if this needs to be the same width wise (as opposed to length), i.e.
x x
x x
or
x x
x x
obviously due to the need for sunlight.

Well walnut trees can get pretty big, so put as much space as you can between them. If they get put to close together, one or two may get more sunlight than the other slower growing ones and grow bigger, blocking out the sun for the smaller ones. Obviously this is a problem as the smaller trees could either stop growing from lack of sunlight and there's a good chance they'd die eventually. But it might just cause it to not grow any branches lower down the trunk of the tree.
Is it a black walnut tree, btw?

Another thing to keep in mind, black walnut trees will often kill other plants near them; their roots secrete a poison. Granted, this doesn't matter to other walnut trees. Also if it's an English Walnut it also doesn't matter because it doesn't produce this (or at least not in the quantities of black walnuts.)
As far as how far apart to plant them, like mr.blunt said, they require a bit of their own space. I think 3 meters should be a good distance apart.

Yea, at least the dwarf figs you can keep in a large pot, and move them inside in the winter.

I second the don't plant them around anything you don't want to die, and as far apart as possible.
We've got a few black walnuts here, and some butternuts(white walnut).
If you are planning on eating them, you might want to put some kind of net under the tree so they dont hit the ground.
Those little wormy things get into them pretty quick when they hit the ground.
Also look up Hammon's Nut products. You can sell walnuts for quite a bit of money.
