Mall open at night...awesome time for shoplifting
My local mall is open at night while all the shops inside are closed, and there happens to be a bunch of cell phone, food, makeup, and sunglass kiosks along the hallways that are locked up at night. They usually have those lockable glass cabinets.
How would a person hypothetically get around something like this.

i was walking around after all the stores closed today with some friends. The stores closed at 9 and all the employees are usually out by 9:30-10. It wouldnt be suspicious to just go behind the counter acting like an employee closing up for the night.

Haha great idea but I don't look old enough to pull that off.
But in terms of strategy, I would use the paperclip thing. I'm just worried that the cabinets might have an alarm or something. I really want those wayfarers

I doubt a glass case on a mall kiosk is going to have an alarm. If you're not smashing in a jewelry display case, you should be fine.
I also second the idea of pretending to be working at the kiosk.

Wear a disguise and bring pepper spray, just in case. Head for whatever has the most profitable merchandise(take into account size, weight, resale value, ability to be traced to crime, ability to be sold easily, and how far away the case is from the exist), then, if no one's watching, just open it, put as much merchandise as you can into a bag, and walk out of there. It's a simple job.

Small locks like that commonly use wafer tumblers which are very easy to pick. Even if they're pin tumblers, small ones like that probably only have 3-4 pins which are easier than a 5 pin deadbolt. With some practice either of those can be picked very quickly. I had a garage with a wafer tumbler lock on it that I eventually could pick as fast as using the key. So yeah, read up on lock picking.

It might be easier to just unscrew that screw if your able to get to it. the way those locks set up is so you can lock it while the lock is in the locked position so if that screw wasnt in the arm kinda thing it would probably slide through. Not sure though, try and get one somehow if its possible and practice. You always want to know what your doing before you actually do it which is common sense really...

wafers are probably the hardest locks to pick...wtf are you smoking?!
