Trigun is fun, but childish.
If you want the very pinnacle of space opera go for Battlestar Galactica. There's no western element in it, but it's epic-ness will blow your mind. And not only is it cool, but it's a legitimate serious (while still very entertaining) drama at the same time. Possibly the best TV series I've ever watched.
