Marie's Dressing (3/4 of a cup)

1 tsp salt
3 cloves of minced garlic
1/2 tsp pepper
1 tbsp Dijon mustard
1/8 cup wine vinegar
2/3 cup light oil

Mash the salt into the minced garlic until the mixture's a paste. Using a fork, mix in one ingredient at a time: pepper, then the mustard, then the wine vinegar, and then the light oil. Stir with a fork until the dressing thickens.

A mortar and pestle comes in handy for this one. It'll keep in the fridge and it's tasty.
