My vote would go to American small block V8's. Its been pretty much unchanged for the last 50 years. They are really simple and pretty much bullet proof. The replacement parts are plentiful and cheap; and every mechanic in the world can fix them

I wouldn't disagree with what you said about the small blocks, but for ease and simplicity, I'd nominate the 3.8/4.3 carb'd Chevys and Fords. There are only 3/4 as many bolts in them.
