Older eggs have evaporated more water out, and have a bigger air pocket which makes it easier to peel. That's what I've read at least.

im pretty sure the cold water is only to keep the perimeter of the yolk from turning green. how easy a hardboiled egg is to peel is directly proportionate to how perfectly you cooked them.

also, a good trick is to crack it a little then roll it around on the counter with your palm. the whole shell will break into miniscule pieces like scales but still held together by the film underneath the shell. then peel

I've tried all this shit with mixed results. I think my issue lays in how I cook them. My chickens are laying like a dozen eggs a day, so I have plenty of practice eggs. I'd iek to hardboil them and pickle a bunch. I saw this asshole on Youtube put baking soda in the water to alter the pH, then he just BLOWS the egg right out of the shell. I couldn't get that to work for shit. I believe I have been overcooking the eggs though. So, best practices for the actual boiling? I'll try the boiling water then letting it sit for 20 minutes with the lid on maybe. At the moment. I bring the water to a boil, them them cook for a minute in boiling water, then remove them from the heat and let them sit for 5 minutes with the lid on. I was told this was the way to do it. They are small eggs however, so maybe this is for a larger egg and I'm over doing it?

I think you're on the right track. I put the eggs in room temp water, put on stove, and bring to a boil (w/ the eggs in the pot). After a minute of boiling, I turn off the heat, cover (still on the electric stove) and let slow cook for like 10 min. Then I rinse in cold tap water. It doesnt sound like you are overcooking them, I just think you need to stop them from self-cooking after you take them off heat (ie rinsing in cold water).

I think its like a steak, even after you remove it from heat, it will continue to cook itself from the heat stored in it. Thats why I order medium rare steak, by the time you finish eating it, its pretty much medium

Nope. Best way to peel a hardboiled egg is to add some baking soda to the water when boiling it, throw it in some chill ass water and then break a piece off the top and bottom, just a small piece. Hold it firmly in your hand so it can't slip through easily but the bottom is open (like a blowpipe) and blow into one of the holes. It pops right out. Try it yourself. Was taught this one by my grandma.

Ya, I watched a video on Youtube of a guy doing that, and it blew my mind. I tried it and failed miserably. Oh well, I'll try again tomorrow. How much baking soida goes into the water? Say I fill an average size pot half full of water to boil a dozen small eggs. A tablespoon of baking sida kind of thing? I got like 60 eggs in my refrigerator or something right now. So if they wind up going right back out to the chickens to eat, so be it. I intend on mastering hardboiling eggs this week, and trying to pickle them as soon as I get that much figured out, lol.

I've seen some suggestions that the eggs should be allowed to get to room temperature before boiling. i keep them in the fridge, So I wll take them out before I goto bed and let them do their thing over night. Then I am going to reattempt the baking soda method, with a medium boil as opposed to boiling the fuck out of them.

Fuck today was a miserable failure. I don't think the eggs were cooked enough this time. The whites seemed really soft. I gave it a little tap on each end, and it would start peeling alright, then the whole egg would just fall apart.

I just CAN NOT get a god damn egg to boil and then peel nice and easy without ripping the egg to shit.

After boiling and letting the eggs sit for 10-15 min, I roll the thing on the counter and peel under a stream of tap water. The plus to this is that you don't get to a point where you're trying to flake off a "Scale" with your thumbs and your dry skin rips off the a chuck of the whites. The water kinda runs underneath the shell as you're peeling. Has always worked for me.

I have a theory the peelability is related to brand/type of eggs. Like every single egg is fucked from certain brands. Not sure what its related. I get the free range ones and any time i use this certain brand i have loose like 50% of the egg. Other freerange is fine though.

I eat ALOT of boiled eggs and have thought about this many a time.. for some unknown reason..

It's a neat trick but a lot like impressing your friends by opening a beer bottle with a lighter.

Ok, so I bought a case of eggs fromt he store today, and they boiled and peeled perfectly. I even managed to perfectly execute the "blow an egg out of it's shell" trick. Clearly, the issue is the eggs themselves.

So I guess the question now is, how long do the eggs need to age? They're taking up tons of space in my fridge. I want to get these little fuckers pickled. They seem to have a very thick membrane. Is there a dietary change I can make in my chicken feed, how does one age the eggs and for how long?

I'm thinking of just picking up a couple packs of those "Eggies" at this point.

Well from what I know on old eggs peeling easy is its just the ones about to expire. If it is close to after the date on the carton they should be old enough to peel no problem.

If you have pet chickens and too many eggs let them lay a clutch and sit on them. They will do this even without a rooster.

Let them sit for like a week or two, too short and they don't change, and their maternal hormones kick in and they become adorable little pets that sit in your lap and snuggle against you. Steal the eggs obviously.
