I'd start off with some Miles Davis(Even though he's far from one of my favorites he is a good entry point), Charles Mingus, and John Coltrane and work deeper in to the genre from there.

Download "The Heliocentric Universe" by Sun Ra. It is one of the most vivid, visual and psychadelic jazz albums I have heard.
Charles Mingus is cool too. Also, Ornete Coleman is fucking kickass; probably my personal favorite.

Ellington is super classy, one of those artists that you know is great, but can be a little inaccessible at times. Just my opinion though.

Charles Mingus and John Coltrane where both great. In fact, A Love Supreme is probably the best "starter" jazz albums.
Two of my favorites are Thelonius Monk and Milt Hinton.

Al Di Meola is quite rad; definetly a good listen if you're trying to get into the genre.
He used to do fusion stuff with Return to Forever and then some solo work, but now tours with a fucking awesome band and plays softer more diverse stuff!

Check out some of Marcus Miller's work. He's a bassist that has elements of jazz, but also with elements of hip hop funk and even a little rock. He is very accessible if you're tryin to get into jazz, I know he was with me. Bruford is also a great band with elements of jazz in their playing. Plus, Jeff Berlin is in the group
And of course Weather Report (especially with Jaco), Charlie Parker, John Coltrane, Sonny Rollins are great.

I can see where you are coming from with the previous statement.
If one does not have a preexisting appreciation for jazz, the Ellington/Strayhorn compositions may not be the best place to start.
Although once one gets an ear for such, it is hard not to appreciate their collaborations, not purely based on complexity, yet hand in hand with the large body of material, as well as the magnitude of which have become standards. I can honestly say that Johnny Hodges has become one of my favorite alto sax players.

I got into jazz when I was flipping through the stations and found KKJZ. They play a really diverse range of Jazz and are commercial free. If you live in the orange county area, they broadcast out of CSLB, but they also have a internet "mirror"(don't know the right word for that). It's a great way to hop into jazz and find out what you like.

Also, if you want to get into jazz and really enjoy it, you need to listen to it in a different way than any other genre. Its not a smug statement, but the approach to jazz is totally different from just about every other genre.
A great example is Charlie Parkers be bop work. If you really want to get into it and understand it, you have to listen to the notes that are NOT being played. What I mean by that is Parkers soloing comes from the harmony. It follows the complex chord changes in the song.

Come On Come over is such a great tune. Jaco's steady 16th note run in the chorus is so damn groovy. He could play so damn funky in just one hand position. Excellent use of muted notes on the bass
