So im making some ramen last night, im baked and pretty hungry.
I got some polenta going with it and decide to fry some taters.
So heres how i did the potatoes.
Cut three potatoes into circular chips [skin on], cut them relativly thick. Boil them for about 5-10 minutes, then strain (i kept the water for the noodles). Chuck them in a pan of olive oil and fry for about 5 minutes (i put lid ontop) and stir occasionaly.
Then i had this mixture i had prepared when the potatoes where frying and the noodles boiling.
Cumin seed
Garam Masala
Curry Powder
Chilli Powder
Cloves
Peppercorns
Mustard Seed
I mixed with this some cornflour and noodle soup (but some butter, milk or cream would have been better), just enough to get a good batter like consistancy with enough quantity to spread around all the taters.
I used that because thats what ive got in cupboard
So once the potatoes have finished turn the heat off and add the mixture, then get a fork or spoon or chopsticks, any kind of cooking utensels (but not masher) and stir the mixture in with the potatoes. Then start stabbing it until you have a consistncy somewhere between roasted and mashed potatoes, and the remining heat from the pan will sear it a little.
This i have to say, tasted rediculously nice.
P.S i put about a tablespoon of sugar in the mixture just because it tasted quite strong to my palet without it.
