I've been getting back into baking (post your recipes)
and in the last couple of months I've tried new recipes for various cakes, bakes, slices, crumbles, scones and puddings. I say I'm trying new recipes because usually I have one or two favourite recipes which I tend to stick to. I've spent years perfecting my cakes and finding trusted recipes (apparently recipes aren't required to be tested prior to publishing), but I moved house within the last year - I'd gotten so used to my old oven, the one in the new house is just shitty: it's old, it cooks unevenly, and I think the temperature is slightly off. I've been pretty disheartened (and pissed off) by my past efforts, I avoided the damn thing for a good few months and have only just decided to give it another go.
anyway, I'm having to alter my recipes or find new ones altogether. I'd really like a good flapjack recipe - I have my own which used to produce perfect flapjacks every time, but I tried it a few days ago and it ended up partially burned (on one side) within half the time I used for my old oven.
so yeah, post your favourite recipes for me to try. particularly interested in a (moist!) red velvet cake recipe, a good roulade or the likes, and fruity things (cakes, crumbles, I don't mind - fruit anything is delicious)

no we're just poor right now  and it only comes in the way of my baking, really - he doesn't care about how his food is cooked as long as it's edible. as long as I can fry/scramble/poach eggs he's fine

Ever thought about getting a convection microwave? I donno what one would run for but they're pretty nifty and most importantly they cook evenly and properly provided you get a decent one. Might be enough to tide you over until you move again.

I've found that a little sour cream makes most cakes more moist but I've yet to tackle a red velvet cake. I love to bake though, we will have to exchange recipies sometime. I want to increase my cookie repertoire.

What is a flapjack to you? To me is a cm thick pancake, roughly the size of your fist.
I have a solid buttermilk recipe and it still tastes good without the buttermilk.

yeah I've tried that a few times, it works really well. reducing the water a small amount and increasing the oil by as much is pretty effective too. I know a lady who makes cakes using banana and rice bran oil instead of milk and eggs as she's allergic to both. her cakes are amazing.
most bakers seem to think it's all in the preparation and cooking time/temperature - unfortunately no matter how closely I follow the recipe regarding ingredients, mixing times, how many folds I'm supposed to make, and how quickly I get everything into the oven, I can't get anything right while my oven is a pile of crap
one of my friends is currently claiming she's found a good (moist!) red velvet cake recipe. I'm dubious but we'll see. I can post it if you want to try

I didn't know flapjacks meant something different in Canada. over here they are 1" thick baked bars made with rolled oats, butter, (brown) sugar, and usually golden syrup. they're really sweet and chewy
can you post your buttermilk recipe? I've been wanting to make a super moist devil's food cake and my buttermilk isn't quite right

no, I don't really like eggs. my boyfriend does though, his diet is pretty much just alternating and eggs, chicken, beef, and tuna

Made a swiss roll today, was delicious
My Mum's got a recipe for flapjacks, turn out perfect every time... nice and moist. Don't like them when they go brown and crispy. Will phone her for the recipe if you're interested.

SMU those flapjacks you posted sound exactly like Anzac biscuits cept because they're cookies you get this awesome crunchy outside with a chewy inside.
Oh and are you any good at making macaroons? I've made a few attempts but they always end up looking munted

ah man, this thread makes me miss my old living situation. fuck.
I don't know the exact recipe, could probably find it, but these muffins that has sunflower seeds in were fucking gorgeous that I had a few months ago. They were a particular stand out, and she made cakes like every week. I'll see if there is a recipe online, as this was from a book that I can't access.
edit: some recipes about, they seem to lack butter though. cakes with vegetable oils tend to taste chalky.
