Olive oil
What's the deal with this stuff?
I know there are different grades, with the best being extra virgin. But then we have it "cold pressed" and "ultra mega super premium" and all that jazz. What gives? How do I know which olive oil to get, despite all these seemingly-arbitrary recommendations of quality?

You taste them.
Also think about how you plan to use them. Are you going to sautee something? You might not want to use a super strong expensive oil because for one it's going to overpower other flavors and two its fucking expensive.
Are you making a vinaigrette? Again, an extra virgin olive oil might be too strong for whatever vinegar or acid you are using. I frequently use a blend of canola and extra virgin for vinaigrettes, and sauteing with some exceptions.
Are you using it simply as a garnish or condiment? A strong full bodied extra virgin olive oil is great for this. A splash in your pasta, a finishing oil for sauces, a dip for your bread ect.

I love Olive Oil on everything! Literally it great for hair, skin and even Heart. I use EVOO on everything! on my skin(legs, face, ect.), pre-poo(b4 i shampoo) and in everything I cook.
Its great stuff!

I use the extra light olive oil for cooking and the extra virgin olive oil for making salad dressings.

Olive pomace oil for everyday frying/roasting as it has the least flavour (and the lowest price).
Virgin for putting into stuff (vinaigrette, cold sauces, on pasta, briefly sauteeing)
Extra virgin for putting onto stuff and eating raw, nothing else.
The open-faced cabinets of middle-class houses proudly display several types of the liquid, inconceivably all of it Italian. Every fancy restaurant pours a green slick over every dish in an attempt to make it 'mediterranean'. It pisses me off. Anyone who fries eggs in olive oil can get fucked.

And three, it has a really low smoke point and will burn on anything except the lowest heat. Bitter, green-tinted scallops ain't tasty.

i listened to a really informative radio program about olive oil. in some parts of the world, the quality of the product is of the same importance as the quality of wine or champagne. not in my country, though, where any old muck can be banged into a pretty bottle and sold for premium prices.
anyway, the gist of it was that the majority of the shop-bought stuff is shite, actually being sub-par to even the most basic oil you'd find in southern europe. did you know that if it comes in a clear bottle, it's automatically obsolete? the sun breaks down important ingredients within the product so no reputable brand will sell it that way - i'm talking about you Bertolli, amongst others.
i go to proper outlets to buy mine. one thing i do like to do is eat well, and for £10 you can buy some very nice stuff that lasts for ages.
i love to dip some crusty bread in it, to start the meal.

YES! I walked in on my brother in law smoking up the kitchen a month ago. He wants to 'cook' but has no reference points. I try to guide him, but he doesn't listen. He is under the impression, if its expensive, its good. Well, if you know how to use the items they can be good.
Yeah, he was trying to fry pork chops in olive oil. Then couldn't figure out why everything was smoking and burning. Then he got bent out of shape when I dumped the oil and put vegetable oil in the pan.

Olive oil is good stuff, but it shouldn't be used for anything more than light frying on medium to low heat. A lot of people think that deep-frying with olive oil is a great idea, but it's one of the worst things you can do. Olive oil burns easily and polymerizes, leaving a nasty taste.
If you're going to do serious frying rather than everyday light frying, use a vegetable oil with a higher smoke point or use some kind of saturated fat like fat or coconut oil.
Personally, I don't prefer to cook with olive oil at all. If I do use it, I use it raw on salad, mixed into pasta, for dipping with bread, etc. For those things, it's great. But for cooking, there are better oils out there.

I once tried to make a stir fry with extra virgin olive oil, I fucked up my pan and stunk up my kitchen for two days even with the fan running. The smell of burned virgin olive oil is repulsive. I was like 12. I make a fucking MEAN stir fry now, but I use this stick-proof green pan my mother bought me, you don't need any oil unless you want a slight dash for flavor. The juices from the beef and the moisture from veggies are usually enough anway.

yes.. different types of oils have different smoke and flash points. Olive oil is low, so if you use it to fry something, make sure it will cook fast. Thin, thin chicken paillards. that kinda thing

Olive is oil is the bomb. It was the only oil I had for about a year at one point. I got a a few four litre containers off my folks. At one point I attempted to deep fry potatoes in it. Fucking stupid.
