Thumbs Up Post your favourite food AND a recipe

As the title says - post your favourite food, but post a recipe also.

So, say your favourite dish is Chicken Cacciatora, you would post the recipe you use to make it.
If your favourite food is potato, then post a recipe for a potato-based dish, or something including potato.

This is not limited to main courses, entrées and desserts are good too.


I'm hoping this will help a lot of people discover new foods, and how to make them.
Plus, if it's your favourite food then it's tried and true, and you know the recipe will be correct.

At the moment my favourite food is pita bread dipped in tzatziki -

Tzatziki

350g/12oz Greek yoghurt
1 cucumber
2 tbsp lemon juice
2 cloves of garlic, grated finely
dash of extra virgin olive oil
paprika, for sprinkling
Salt and pepper (optional)

Method
1. Peel and de-seed the cucumber before grating.
2. Hang the grated cucumber in muslin cloth or a tea towel in order to squeeze out all the excess liquid.
3. Combine the yoghurt, cucumber, lemon juice and garlic. Add a dash of olive oil and sprinkle with paprika.

I don't yet have a recipe for pita bread, so I just buy it.

One of my old favourites is a simple and quick potato-noodle dish.

krumplis tészta

equal amounts of pasta and potato (50g of each is a good general guideline)
1 medium onion
roughly a tablespoon olive oil or butter
hungarian paprika
pepper
salt

Preparation:

Cook your pasta of choice till it's just slightly underdone. Dice up your onion. Chop you potato into small cubes. Oil your pan, toss it all into the pan and season it to taste with the paprika, pepper and salt. Fry it until things crisp up a bit, enjoy.

It's cheap, satisfying, and works as a side or a main.

Spring Chickpea Salad

1 small red onion, peeled and diced
2 red chilis, diced and de seeded(unless you like the heat, then leave the seeds in)
2 handfuls red cherry tomatoes, halved
2 lemons
14oz can of chickpeas, drained
a handful of fresh mint, chopped
a handful of fresh basil, chopped
7oz feta cheese, cubed
salt
pepper
oil

Mix your cut onions, tomatoes, and chilis together in a bowl. then squeeze the juice of your lemons over top. add some olive oil, about twice as much oil as lemon juice. season with salt and pepper to taste. In a pan on medium heat, add your chickpeas, and cook till warm. then add about 70% of your warm chickpeas to your bowl of vegetables. the other 30% of your chickpeas still in the pan are now going to get smashed with a fork. then add these chickpeas to your bowl. toss it all together and let it sit for about 20 min at room temp. before you are going to serve it toss in your mint, basil, and feta.

As far as I know the traditional Greek recipe doesn't include mint. Correct me if I'm wrong though

Fuck yeah! Tzatziki!

Instead of using olive oil. Try colza oil. It changes the flavor a bit, and I find it adds a bit more greek taste to the dip.

It goes well at a BBQ with other sauces.

Try to make Bearnaise sauce if you like these sorts of dips.

My favourite dish at the moment is a stir-fry that my mother makes.

Stir Fry -

1x Brown Onion.
Chicken Breast (as much as you want really) - chopped.
5-6 cloves of garlic - chopped.
Carrot - chopped.
Broccoli - chopped.
Snow Peas.
Spinach Leaves.
Bok Choi (leaves).

Sauce (put ingredients in a bowl and wisk till combined) -

1/3 (or 1/2) Cup of soy sauce (We use this weird health soy sauce alternative - it's a lot nicer anyway).
2 Tablespoons of Honey.
3cm piece of ginger (chopped).
1/4 Cup of Chicken Stock.

Method:

1. Cook chicken till browned. Take it out of pan/wok and put in a bowl.
2. Saute onion and garlic together. Take out and put it in a bowl.
3. Saute Carrot, Broccoli and Snow Peas (if you have a wok, do them separately.).
4. Add the cooked onion, garlic and chicken into the pan with the other cooked vegetables.
5. Add spinach leaves and Bok Choi (leaves), and mix.
6. Add the Sauce and simmer for a few minutes.
7. Serve with Rice or Thick Noodles.

Enjoy .
